Amarula bread and butter pudding

6 -8 slices white bread
Butter
2-3 bananas sliced or raisins (optional)
2 eggs
60ml (4 T) sugar
750ml (3 cups) milk
5ml (1t) vanilla essence

Amarula Cream Sauce
250ml (1 cup) sugar
125ml (115g) butter
15ml (1T) water
250ml (1 cup) cream or full cream milk (make half cream / half milk)
Approx 45ml (3 T) Amarula

Butter the bread and arrange, buttered side down in a baking dish (or ramekin)
Tuck banana slices or raisins between the bread
Beat together the eggs, sugar, milk and vanilla essence. Pour this over the bread and let it soak for 30 mins. Cover the dish with foil, and bake in a pre heated oven at 180 for about 30 mins. Remove the foil and sprinkle tops of bread with brown sugar. Return to oven to brown the tops.

Sauce: combine the sugar, butter and water in a small pan (low heat), stirring until the mixture starts to caramelize and change colour. Don’t let it burn. Remove from the heat and stir in the cream / milk and Amarula. Reheat, stirring until the sauce is smooth and pour over the hot pudding.
